Tree to Table: The Secret Lives of Dates

On a recent road trip through Arizona, my sister and I made a stop (a delicious stop I might add!) at Dateland. It was date heaven—literally. The little store in the middle of nowhere (or so it seemed) was surrounded by rows of date palms swaying in the desert breeze. You could seriously smell the sweetness of the dates as you walked next to the trees.

Inside the store, there were rows of dates in all different varieties. I didn’t even know there were so many varieties but it makes sense. I opted for two varieties: Medjool and Khadrawy. Of course, I had tasted Medjool dates before but was intrigued by the Khadrawy dates, which it said they are good for baking.

I tasted the Khadrawy dates and they have a very different texture than the Medjool dates. Almost like an airy texture to them, whereas Medjool dates seem so thick and moist and you bit into the layers of goodness. The Khadrawy are sweet but not as thick or packed…it’s hard to explain.

Date Rolls
The store had packaged dates on the shelves, but also dates in boxes in the refrigerators. But the real showstopper? A simple almond-covered date roll. Just dates and almonds—and it was amazing. Naturally sweet, deeply nourishing, and totally addictive in the best way. I wish I would have bought more because they were soooo good!!!So, of course I had to recreate my own! Dates are the perfect option to sweeten goodies while actually providing your body with good stuff.
The Secret (or not so secret) Sex Life of Dates
There was a hilarious shirt that talked about how the sex life of dates and honestly I was blown away at how much work it takes by humans to make sure dates are pollinated. We listened to a whole Youtube video about dates after we left and it’s kind of mind blowing!

It’s amazing to think that dates have been nourishing people for thousands of years — and they’re still thriving today. Even more incredible? Most date palms rely on human hands for pollination. Farmers climb the trees to hand-pollinate the blossoms! Talk about being connected to your food, and committed to ensuring the world gets to continue to appreciate this sweet, sustaining gift. Again, I was blown away!
My sister said in passing something about, dates are God's candy. And the more I learn—and bake—with them, the more I believe it. What goodness He gave us in dates!

Lately, I’ve been using dates in my baking—and I can honestly say it’s a game-changer. Not only do my recipes still taste indulgent, but they’re also more nourishing. Whether blended into a smoothie, pureed into baked goods, or stuffed with almond butter for a quick snack, dates add rich flavor and functional fuel. There’s something deeply satisfying in knowing you’re treating your body with something that supports your health—not depletes it.
So next time your recipe calls for sugar, try using dates instead—whole, blended, or chopped. Your body will thank you, and your taste buds will be happy too.
