Tropical Bliss: Coconut Raspberry Dole Whip 

Bring the magic of Disneyland to your kitchen with this healthy, no-sugar-added twist on the classic Dole Whip. We've added creamy coconut and tangy cooked raspberries for a unique flavor profile your taste buds will love!

Ingredients:
 

  • 2 cups frozen pineapple chunks

  • 1/2 cup unsweetened coconut milk (from a can, shaken well)

  • 1/2 cup plain Greek yogurt

  • 1/2 cup cooked and cooled raspberries (strained for seeds, optional)

  • 1 tbsp arrowroot

  • 1 tbsp apple sweetener (optional)

  • 1/2 tsp pure vanilla extract

  • 2 tbsp shredded coconut (unsweetened)

Instructions:
 

  • Cook the raspberries: In a small saucepan, cook the raspberries over medium heat until they break down into a sauce (about 5 minutes). I ended up adding 1 tablespoon arrowroot to thicken the sauce up. I also added 1 tablespoon apple sweetener (optional). Let cool completely. 

  • Blend the pineapple base: In a blender or food processor, combine frozen pineapple, coconut milk, Greek yogurt, and vanilla extract. Blend until smooth and creamy.

  • Swirl in the raspberry sauce: Gently fold the cooled raspberry sauce into the pineapple mixture for a marbled effect.

  • Serve immediately: Scoop or pipe the whip into bowls or cones. Garnish with shredded coconut.
