Greek Yogurt Chicken Salad

Super easy and filling for those days you don't want to cook!

Serves: 2
Prep Time: 10 minutes
Great on: Brown rice cakes, sprouted grain tortilla, over a bed of greens, or with celery

Ingredients

  • 1 cup plain Greek yogurt (2% or whole milk preferred for creaminess)

  • 1 (12.5 oz) can chicken breast, drained and flaked

  • ¼ cup diced red onion

  • ¼ cup diced celery

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ½ tsp sea salt (adjust to taste)

  • ¼ tsp black pepper

  • Fresh or dried dill or parsley (optional)

Instructions

1. In a medium bowl, combine the Greek yogurt, garlic powder, onion powder. Stir until smooth.

2. Add in the chicken, red onion, and celery. Mix well until fully coated.

3. Season with salt and pepper to taste. Stir in dill or parsley if using.

4. Serve:

  • Spoon on top of brown rice cakes for crunch

  • Wrap in a sprouted grain tortilla for a portable lunch

  • Pile onto a bed of mixed greens  or just with some celery.

Tips and Variations

  • Add chopped pickles or cucumber for extra crunch

  • Sprinkle with sunflower seeds or sliced almonds for texture

  • Add a few halved grapes or chopped apple for a sweet-savory twist

  • Store in the fridge for up to 3 days – great for meal prep!
