Cauliflower Veggie Scramble with Avocado & Salsa
Ingredients:

2 eggs
-
¼ cup onion
-
½ cup frozen cauliflower crumbles

½ cup spinach
-
½ avocado
-
1 tbsp Siete salsa
-
1 tsp olive oil or cooking spray
-
Salt & pepper
Instructions:

Heat skillet with oil; cook onion and cauliflower (3–4 min).

Add spinach; cook until wilted (1–2 min).
-
Crack eggs into pan, scramble with veggies; season.
-
Serve with sliced avocado and salsa.
