Blueberry Cinnamon Scones - Gluten Free

Ingredients

¾ cup cassava flour

¼ cup coconut flour
-
(Optional: You can swap cassava for quinoa flour or use a 50/50 mix of cassava and quinoa flour for added protein.)

1 tsp cinnamon

1 ½ tsp baking powder (aluminum-free)

¼ tsp salt

1 large egg
-
¼ cup unsweetened applesauce (acts as a sweetener and binder)
-
2 Tbsp apple juice concentrate or 2–3 Tbsp apple syrup (for natural sweetness)

3 Tbsp coconut oil or grass-fed butter, solid and cold
-
1 tsp vanilla extract
-
½–⅔ cup frozen blueberries (don’t thaw; toss in a bit of flour before mixing in to avoid bleeding)
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together:

Cinnamon

Baking powder

Salt
3. Cut in the coconut oil or butter using a fork or pastry cutter until mixture is crumbly.
4. In a separate bowl, mix:

Egg

Applesauce
-
Apple sweetener (or your favorite natural sweetener - honey, maple, date)
-
Vanilla extract
5. Add wet mixture to dry and stir just until combined. It should be thick but moist.
6. Gently fold in the frozen blueberries (tossed in a bit of flour if desired).
7. Scoop dough onto parchment paper and shape into a thick circle (about 1 inch tall). Cut into 6–8 wedges and slightly separate them.
8. Optional: Lightly brush tops with a little applesauce or apple sweetener for moisture and shine.
9. Bake for 18–22 minutes or until lightly golden and firm at the edges. Let cool slightly before serving.
