Apple Cinnamon Olive Oil Cake
A wholesome, naturally sweet fall favorite made with apples, olive oil, and warming spices.
Ingredients

2 cups finely chopped apples (about 2 medium)

½ cup unsweetened applesauce

½ cup natural sweetener (apple sweetener, monk fruit, or honey)

2 large eggs

⅓ cup extra virgin olive oil

1 tsp vanilla extract

1 ½ cups almond flour
-
½ cup coconut flour (or additional almond flour)

1 ½ tsp cinnamon
-
¼ tsp nutmeg
-
⅛ tsp cloves
-
1 ½ tsp baking powder

¼ tsp salt
Instructions
1. Preheat oven to 350°F (175°C). Line an 8-inch round or square pan with parchment paper or lightly grease it.
2. Mix wet ingredients — In a bowl, whisk together applesauce, olive oil, eggs, vanilla, and sweetener until smooth.
3. Combine dry ingredients — In a separate bowl, mix almond flour, coconut flour, baking powder, salt, and spices.
4. Fold together — Add wet ingredients to dry and stir until well combined. Gently fold in chopped apples.
5. Bake — Pour into the prepared pan and bake for 35–40 minutes, or until golden and a toothpick comes out clean.
6. Cool and enjoy — Let cool before slicing. Sprinkle with cinnamon if desired.
