Mandala Fruit Pizza

This colorful fruit pizza features a soft, slightly sweet crust made from almond flour and Greek yogurt, naturally sweetened with honey. It’s topped with creamy Greek yogurt “frosting” and finished with a rainbow of fresh fruit like strawberries, blueberries, and peaches.
Perfect recipe to let kids be involved and pick out the fruit they want and create their very own fruit pizza art. The ideas are endless!!

Servings: 6

Ingredients

Crust:

  • 1 cup almond flour

  • ¼ cup plain Greek yogurt (or non-dairy yogurt)

  • 1 tbsp coconut oil, melted

  • 2 tbsp honey (or your favorite sweetener)

  • ½ tsp baking powder

  • ½ tsp vanilla extract

  • Cinnamon - optional

"Sauce" Layer:

  • 1 cup plain Greek yogurt (or non-dairy yogurt)

  • 1 tbsp honey (or your favorite sweetener). Can add more if you want it sweeter.

Toppings (thinly sliced): Choose whatever fruits you like. I just the following

  • 4 -5 medium strawberries 

  • 20 blueberries 

  • ¼ fresh peach

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a bowl, combine almond flour and baking powder.

  3. Add Greek yogurt, coconut oil, honey, and vanilla. Mix until a dough forms.

  4. Press into a ¼-inch thick circle on parchment.

  5. Bake 10–15 minutes until golden and firm. Sprinkle cinnamon on top and let Cool completely.

  6. Mix together yogurt "sauce" ingredients well and spread over the cooled crust.

  7. Slice fruit and arrange creatively to make a beautiful fruit art pizza!

  8. Optional: Top with cinnamon and drizzle with honey.
