Strawberry Chia Yogurt Cups with Quinoa Flakes
These delicious chia yogurt cups are packed with nutrients and can be a great alternative to ice cream or can be a nutritious snack or meal. They can be made with plain greek yogurt or you can also use coconut yogurt as pictured. Just note that the recipe below is for plain greek yogurt cups and the nutritional info reflects that. Enjoy!

1 ½ cups plain Greek yogurt (unsweetened, full-fat or low-fat)

1 ½ cups fresh strawberries (hulled and washed)

2 tbsp chia seeds

2 tbsp quinoa flakes

1 tsp vanilla extract

Pinch of sea salt

Optional: 2-3 tbsp honey (or maple syrup, adjust for sweetness preference). This is not calculated in the nutrition info as I made mine without sweetener

Prepare the Ingredients:

In a blender or food processor, combine the yogurt, strawberries, chia seeds, quinoa flakes, honey, vanilla extract, and a pinch of sea salt.

Blend Until Smooth:

Blend the mixture until it's completely smooth. Scrape down the sides if needed to ensure all ingredients are fully incorporated.

Taste and Adjust:

Taste the mixture and adjust the sweetness by adding a bit more honey or maple syrup, if desired.

Set in Cups:

Divide the mixture evenly among small jars or cups.

Refrigerate:

Cover the jars and refrigerate for at least 4 hours or overnight to allow the chia seeds and quinoa flakes to thicken the mixture.

Serve:

Top with your favorite clean toppings like sliced strawberries, a sprinkle of quinoa flakes, or shredded coconut, and enjoy. I prefer to top with melted Just Date Organic Dark Chocolate Chips – either served right away or put in refrigerator again for about 10 minutes to let the chocolate set up. (they are only sweetened with dates).
