Broccoli Slaw

Broccoli Slaw is a crunchy, colorful mix of shredded broccoli stems, carrots, and red cabbage, tossed in a light, creamy dressing made with Greek yogurt, apple cider vinegar, a touch of honey or maple syrup (or apple sweetener), and a sprinkle of salt and pepper. It’s a fresh, fiber-packed side dish that’s perfect for picnics, potlucks, or a crisp contrast to heavier meals.

​Ingredients:

  • 1 (12 oz) package broccoli slaw mix

  • ½ cup plain Greek yogurt (or regular plain yogurt)

  • 2 tablespoons honey (adjust to taste)

  • ⅓ cup raisins

  • Salt and black pepper to taste

  • 1 tablespoon apple cider vinegar or lemon juice for a little tang

Instructions:

  1. In a large bowl, whisk together the yogurt, honey, and (if using) the vinegar or lemon juice until smooth.

  2. Add the broccoli slaw and raisins to the bowl.

  3. Toss everything together until the slaw is evenly coated.

  4. Season with salt and pepper to taste.

  5. Chill for at least 15 minutes before serving for best flavor and texture.

     

Tips & Variations:

  • Add toasted sunflower seeds or chopped nuts for crunch.

  • Mix in shredded apple or grated carrot for added sweetness and color.

  • For extra protein, use Greek yogurt.
