Ingredients
Ingredients (for 2 pancakes):
- 1/4 cup (56g) cottage cheese (unsalted, low-fat)
- 1 large egg
- 2 tbsp almond flour
- 1 tbsp coconut flour
- 1/4 tsp baking powder
- 1/4 tsp pure vanilla extract (optional)
- Pinch of sea salt
- Coconut oil or non-stick spray for cooking
- 1/2 tsp cinnamon

Instructions:
1. Prepare the batter: First put the cottage cheese in a blender and blend until smooth. Next, in a mixing bowl, combine the cottage cheese, egg, almond flour, coconut flour, baking powder, vanilla (if using), and a pinch of salt. Mix well until you have a smooth batter. Let it sit for 2-3 minutes to allow the coconut flour to absorb moisture.
2. Heat the skillet: Heat a non-stick skillet over medium heat and lightly coat with coconut oil or non-stick spray.
3. Cook the pancakes: Pour half the batter onto the skillet for the first pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges set. Flip gently and cook for another 1-2 minutes. Repeat for the second pancake.
