Date Rolls with Coconut

Naturally sweet and satisfying, these no-bake date rolls are made with just three wholesome ingredients: soft Medjool dates, shredded coconut, and chopped almonds. Perfect for a quick snack or healthy treat, they're chewy, nutty, and full of fiber—no added sugar needed! 

Ingredients

Ingredients (makes ~10 small rolls):

  • 1 ½ cups Medjool dates, pitted

  • ½ cup unsweetened shredded coconut, plus more for rolling

  • ¼ cup chopped raw almonds (lightly toasted for extra flavor, optional)

  • Pinch of sea salt (optional, enhances flavor)

Instructions

  1. Soften dates: If your dates are firm, soak them in warm water for 5 minutes, then drain well.

  2. Blend: In a food processor, pulse dates until a sticky paste forms.

  3. Mix in: Add ½ cup coconut, chopped almonds, and sea salt. Pulse until just combined. (You still want texture from the almonds.)

  4. Form rolls: Scoop out tablespoon-sized portions and roll into little logs or balls.

  5. Coat: Roll each date log in extra shredded coconut for that classic look.

  6. Chill (optional): Refrigerate for 10–15 minutes to firm up.

Storage

  1. Keep in an airtight container in the fridge for up to 2 weeks—or freeze for longer!

Notes:

  • Most of the sugars come naturally from the dates—no added sugar.
