Cauliflower Veggie Scramble with Avocado & Salsa

Ingredients:

  • 2 eggs

  • 2 Amyla turkey sausage (this has no sugar or preservatives but you could use what you are able to find)

  • ¼ cup onion

  • ½ cup frozen cauliflower crumbles

  • ½ cup spinach

  • ½ avocado

  • 1 tbsp Siete salsa

  • 1 tsp olive oil or cooking spray

  • Salt & pepper

Instructions:

  1. Heat skillet with oil; cook onion and cauliflower (3–4 min).

  2. Add spinach; cook until wilted (1–2 min).

  3. Crack eggs into pan, scramble with veggies; season.

  4. Serve with sliced avocado and salsa.
