Cauliflower Veggie Scramble with Avocado & Salsa
Ingredients:

2 eggs
-
2 Amyla turkey sausage (this has no sugar or preservatives but you could use what you are able to find)

¼ cup onion
-
½ cup frozen cauliflower crumbles

½ cup spinach
-
½ avocado
-
1 tbsp Siete salsa
-
1 tsp olive oil or cooking spray

Salt & pepper
Instructions:

Heat skillet with oil; cook onion and cauliflower (3–4 min).

Add spinach; cook until wilted (1–2 min).

Crack eggs into pan, scramble with veggies; season.

Serve with sliced avocado and salsa.
